CINCO DE MAYO RECIPE: QUICK AND EASY REFRIED BEANS

These Quick and Easy Refried Beans are made easy using canned beans and made healthier without the refry.

Servings: 5 (1/2 cup) servings

INGREDIENTS
- 1 (28 oz) (850 g) can pinto beans, drained and rinsed
- 1/2 cup (120ml) water
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/2 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon dried oregano
- salt, pepper, and cayenne pepper to taste
INSTRUCTIONS
- In a medium saucepan combine all the ingredients. Simmer over low heat for 5 minutes. Mash with a potato masher or the back of a spoon. (These will not be super smooth beans)
- Continue to cooker over low heat for 10 minutes or until they reach desired consistency. Stir occasionally to help prevent burning. (Beans will also thicken as they cool)
RECIPE NOTES
- Make ahead tip: Beans can be stored in the refrigerator for up to 4 days or frozen in an airtight container for up to 3 months.
- If you would rather use black beans they substitute well.
- These beans are vegetarian and vegan.
- They are also gluten free (just be sure to check your labels before purchasing to ensure they are gluten free).

CINCO DE MAYO RECIPE: CHICKEN FILLING
INGREDIENTS:
- 3-4 boneless, skinless chicken breast
- 1 15 oz. can of corn (drained)
- 1 15 oz. can of black beans (drained)
- 1 16 oz. jar of salsa
DIRECTIONS:
Place all ingredients in slow cooker. Cook on low for 3-4 hours or high for 2-3 hours. Remove chicken and shred. Return to slow cooker and cook on low for 1 more hour.
Makes an excellent filling for tacos and burritos or can be chilled and used as a salad topper.

CINCO DE MAYO RECIPE: TIA’S GUACAMOLE
RECIPE NOTES:
Prep time – 10 minutes
Serves – 4 (ish) we love avocado and guac in my house and scoop generously
INGREDIENTS:
- 2 ripe avocados – California of course
- 1 T lemon juice
- ¼ cup chopped sweet onion – Vidalia or Maui preferred
- ¼ cup chopped roma tomoatoes
- Adjust your spices according to you taste:
- 1 clove of garlic mashed or ½ tsp garlic powder
- 1-2 T – Chopped fresh cilantro
- 1 T – Chopped Jalapeno
- ¼ – ½ C Sour cream or Greek yogurt – optional, this makes the guac go further
DIRECTIONS:
In a bowl, mash the avocado with a fork, add the rest of the ingredients and serve.

CINCO DE MAYO RECIPE: TIA’S PICO
TIMING:
Prep time – 20 minutes
INGREDIENTS:
- 10 Roma Tomatoes chopped
- 5 limes – juiced
- 1-2 Jalapenos chopped (for less heat remove the seeds) Can’t find Jalapenos, try Serrano Pepper but they are usually hotter.
- 1/2 – 1 C – chopped white or sweet onion
- 1/2 C finely chopped cilantro
- 1 T white vinegar
- 1 tsp sugar
DIRECTIONS:
Combine vinegar, sugar and lime juice in a bowl, then add the rest of the ingredients. If we don’t eat it all at one sitting, I store in mason jars and it usually lasts 1-2 weeks.

Sad to miss San Diego this month? The California State Games will be held in San Diego, July 17-19. While the event is traditionally for youth sports, the following sports offer adult divisions and are open to eligible athletes:

USPFC PARTNER: NATIONAL UNIVERSITY
Last year National University unveiled its Public Safety Promise which offers ALL Public Safety personnel, sworn and non-sworn, a 25% Tuition Scholarship for over 75 flexible degree programs. Students can take one 30-day class or work towards an Associate, Bachelor or Master’s Degree. Courses are offered in a unique four-week format, on campus, online, or through a hybrid combination. In addition, students might be eligible to receive credit for prior learning. NU expanded its 25% Tuition Scholarship to include spouses and dependents as well if enrolled by June 30.
